Sesame Miso Appetiser

A refined first course — house-made sesame tofu set in dashi, dressed with aged white miso vinaigrette and a scattering of toasted black sesame.

Method

    Whisk together miso, rice vinegar, sesame oil, honey, and dashi until smooth. Taste — the dressing should be tangy, savoury, and lightly sweet.

    Drain the silken tofu carefully. Cut into neat 4cm × 2cm rectangles using a wet knife (prevents sticking).

    Spoon a small pool of miso dressing onto each plate. Place two tofu rectangles alongside.

    Drizzle additional dressing over the tofu. Scatter black sesame and shiso chiffonade.

    Serve immediately — silken tofu weeps quickly once plated.
